JALAPENO POPPER CHICKEN SALAD

Would you believe me if I told you this recipe was made from leftovers? Some of my most favorite dishes come from random ingredients I find in my fridge and pantry.


This chicken salad recipe is spicy, cheese, and loaded with bacon. Just a few simple ingredients, and it comes together in a pinch!


INGREDIENTS:

  • 2 cups cooked, shredded chicken

  • 4 slices of bacon, cooked and chopped

  • 4 oz cream cheese, softened

  • 1/2 cup mayonnaise

  • 3/4 cup shredded cheddar cheese

  • 3 green onions, chopped

  • 1/4 cup diced jalapeño (about 3, stem and seeds removed) DIRECTIONS: Mix all ingredients together in a large bowl, chill, then serve! How simple is that? As far as your chicken is concerned, you can use whatever style you like. Shredded rotisserie, pre diced and frozen, or cooking it in the skillet or instant pot. I seared the chicken breasts in a skillet sprinkled with onion powder, garlic powder, and paprika to get those nice crispy edges.
