INGREDIENTS:
12 large eggs
6 oz sliced ham
1 cup monterey jack cheese, shredded
1 cup diced peppers (I used mini red, yellow, and orange)
1 package of crescent rolls
1/4 cup milk
1 Tbsp butter
1 Tbsp Ranch seasoning
1 Tbsp garlic powder
1 Tbsp dried chives
1 teaspoon onion powder
1/4 teaspoon oregano
Salt and Pepper to taste
DIRECTIONS:
Preheat oven to 375 degrees.
In a large bowl, crack all of your eggs and scramble. Add milk, diced peppers, chives, Ranch seasoning, garlic and onion powder, oregano, salt and pepper. Mix well.
In a separate small bowl, melt butter.
Brush 1/2 of the melted butter onto the bottom of a 9 x 13 casserole dish.
Pour the egg mixture into the dish and bake for 15 minutes.
While the eggs are cooking, chop up your ham into bite sized pieces, set aside.
Remove eggs from the oven.
Sprinkle 1/2 of the shredded cheese on top.
Pull apart the crescent rolls into 2-inch pieces, and layer atop of cheese. Brush with remaining melted butter.
Add ham, then lastly top with remaining shredded cheese. Bake for an additional 15-20 minutes.
