One of my favorite go-to meals (especially during the chillier months) is this crockpot Tuscan tortellini dish. Just a few ingredients with minimal effort- the best type of meal to make during a busy week.

Plus, you guessed it- a recipe with all Aldi ingredients! We love ballin' on a budget, and this recipe makes enough to feed the fam!

INGREDIENTS:

  • 1 package mild Italian sausage links

  • 2 (9oz) packages of Priano three cheese tortellini

  • 3 oz spinach

  • 2 (14.5oz) cans of diced tomatoes

  • 1 (8oz) brick of cream cheese

  • 1 cup chicken broth

  • 1/4 cup sour cream

  • 1/2 TBSP Stonemill garlic and herb seasoning

DIRECTIONS:

  1. Squeeze all the sausage links out of their casing. In a large skillet, cook over medium heat, brown, and chop. Drain any grease.

  2. Add sausage to a crockpot with *chicken broth, garlic and herb seasoning, sour cream, tomatoes (drained), and cubed cream cheese. Cook on high for about 45 minutes, or until cream cheese has melted.

  3. Add tortellini to the crockpot and stir, let the pasta cook for about 2-3 minutes.

  4. Add in spinach and stir until wilted, then serve!

*If you want it to be less creamy and more like a soup, add an extra cup of chicken broth!
