I'm a big fan of recipes that come together in a pinch- and this sweet and savory shrimp bowl does just that!
Ready in less than 30 minutes, this recipe is perfect for a busy weeknight dinner.
Odds are, you have a few of these ingredients in your pantry already, which greatly cuts costs!
INGREDIENTS
1 lb cooked shrimp, peeled and deveined
1 cup dry rice (I used brown basmati, however I prefer jasmine rice for this dish!)
2 tbsp butter, divided
1/2 cup pineapple juice/ tidbits
1/4 cup lime juice
1 tbsp garlic powder
1 tbsp honey
1 tbsp olive oil
1 tbsp soy sauce
1 teaspoon chili powder
1/4 teaspoon sesame oil
Cilantro, minced, to taste
Salt and pepper
DIRECTIONS
Cook rice according to package directions and set aside. For this recipe, I brought the water to a boil, added a splash of garlic cooking oil, lime juice, a tablespoon of butter, and a dash of salt, then added my rice. It adds nice flavor!
In a large bowl, toss prepared shrimp with olive oil, garlic powder, chili powder, soy sauce, sesame oil, salt, and pepper.
In a large skillet, heat 1 tbsp of butter over medium-heat. Add in your shrimp.
Cook for about 3 minutes, stirring occasionally.
Add your lime juice, honey, and pineapple juice with the tidbits, stir and simmer for an additional 3 minutes.
Scoop some rice into a bowl, add your shrimp and pineapple, and garnish with fresh cilantro!
