TACO STUFFED SHELLS

If you love Mexican food like I do, you're always looking for a variety of ways to enjoy it. From tacos, to burritos and enchiladas, you can't go wrong with cheesy, salsa goodness.
This recipe is a different take on a ground beef taco, using jumbo shells instead of tortillas. Mmm!
INGREDIENTS:
1 lb ground beef
1/2 a box of jumbo shells
1 packet taco seasoning
4 oz cream cheese, cubed
2 cups shredded Mexican cheese blend
1 can red enchilada sauce, divided (about 15 oz)
Green onion for garnish
DIRECTIONS:
Preheat oven to 350 degrees.
Cook shells according to package directions. It's okay if they're al dente, since you will also be baking them.
In a large skillet, brown ground beef and chop. Drain any excess grease.
Add taco seasoning and cream cheese. Stir until melted.
Pour about 1/3 of the enchilada sauce to the beef mixture, stir.
Pour another 1/3 of sauce on the bottom of a 9x13 baking dish.
Stuff cooked shells generously with the beef mixture and place into the sauced dish.
Sprinkle cheddar cheese over shells, and pour remaining enchilada sauce on top.
Bake for 15 minutes, or until cheese is melted.
Sprinkle chopped green onion on top!
