SWEET CHILI GRILLED CHICKEN & PINEAPPLE SKEWERS

If midwestern winters weren't a thing, I would be grilling outdoors all year long.

This grilled chicken recipe is the perfect blend of sweet and spicy, great for any barbeque. With less than 10 minutes on the grill, it's a fantastic dish for meal prep too!


INGREDIENTS:

  • 1lb boneless chicken breasts, cubed

  • 1-2 cups fresh pineapple, cubed

  • 1 tbsp olive oil

  • 2 tbsp soy sauce

  • 2 tbsp Thai sweet chili sauce

  • 2 tbsp rice vinegar

  • 3 tbsp honey

  • 1 tbsp pineapple juice

  • 1 tsp paprika

  • 1 tsp lemon pepper

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp salt

DIRECTIONS:

  1. Whisk together all ingredients minus the chicken and pineapple in a shallow bowl. Reserve half for later.

  2. Pour remaining mixture into a gallon freezer bag with the chicken, and marinade for at least 1 hour or overnight if possible.

  3. Heat grill to 400 degrees.

  4. Thread chicken and pineapple onto skewers. (I use wooden skewers that have been soaked in water first).

  5. Grill for about 3-4 minutes per side or until chicken is cooked through.

  6. Brush remaining marinade over skewers and serve!
