SWEET CHILI AIR FRYER SALMON & CILANTRO LIME RICE

This is one of my favorite recipes for meal prep (and yes, I'm that brave coworker who puts salmon in the microwave). Sweet chili sauce with garlic and lemon juice is the perfect flavor combination. Served with cilantro lime rice makes it even better.

Air fryer salmon has changed the game for me, and has become a staple in my weekly meal prep rotation!


INGREDIENTS:

For the salmon:

  • 2 salmon filets, skin either on or removed

  • 1/4 cup sweet chili sauce

  • Juice from one lemon

  • 2 tbsp minced garlic

  • 1 teaspoon red pepper flakes

  • 1 tbsp lemon pepper

  • 1 tbsp olive oil

For the rice:

  • 1 cup uncooked jasmine rice

  • 1 bunch fresh cilantro or 2 tbsp dried

  • 1 tbsp butter

  • 1 teaspoon salt

  • 3 tbsp lime juice

DIRECTIONS:

For the salmon:

  1. Mix all ingredients together, minus the salmon, in a small bowl.

  2. In a large Ziploc baggie, add salmon and pour marinade over top.

  3. Let the salmon marinate in the fridge for 30 minutes up to 2 hours.

  4. Once ready to cook, preheat the air fryer to 350.

  5. Air fry salmon for 10-15 minutes, longer if you like it crispy.

  6. Drizzle with more lemon juice if desired!

For the rice:

  1. Cook rice according to package directions.

  2. Once finished, add cilantro, lime juice, salt, and butter.

  3. Stir and serve!

A super simple recipe that comes together in a pinch. Minimal ingredients, bold flavors!
