SPINACH, BACON, & PARMESAN FRITTATA

I'm sure you've all heard of Jimmy Dean's breakfast sandwiches. There's one item called an "egg-wich" that's seriously the best frozen breakfast sandwich I've ever had. However, processed breakfast sammies aren't something I necessarily want to eat everyday.
I refuse to live a life without this spinach, egg, and bacon goodness though, so I decided to make my own frittata version! What makes this extra delicious is the caramelized onions and savory parmesan cheese. You'll be wanting this for breakfast every day of the week!
INGREDEINTS:
6 large eggs
1/4 cup heavy cream
1 cup chopped spinach
4 slices cooked turkey bacon, chopped
1/2 cup shredded parmesan cheese
1/2 white onion, chopped
1 shallot, chopped
2 tbsp minced garlic
2 tbsp butter
Salt and pepper to taste
DIRECTIONS:
Preheat oven to 400 degrees.
Whisk together eggs and heavy cream, set aside.
In a cast iron skillet (or any oven safe skillet), melt butter over medium heat.
Add the chopped onion and shallot, cook for 3-4 minutes, or until translucent.
Add minced garlic, cook for an additional 1-2 minutes, or until fragrant.
Turn heat to low and add chopped spinach, wilt slightly.
Add chopped bacon, parmesan cheese, salt and pepper- stir.
Pour egg mixture into the skillet, fully covering the veggies, bacon, and cheese.
Cook for 2-3 minutes, or until the edges start to brown.
Transfer skillet to the oven, and cook for 8-10 minutes, or until the middle has set.
Slice and serve!
