PRETZEL CRUSTED CHICKEN

This recipe is not your average chicken dinner. Crispy, yet juicy, and full of pretzel goodness!


INGREDIENTS:

  • 1 lb boneless chicken breast

  • 2 cups of pretzels, crushed

  • 2 large eggs

  • 1 tbsp olive oil

  • 1 tbsp paprika, onion and garlic powder, salt and pepper

* optional: honey mustard dipping sauce


DIRECTIONS:

  1. Flatten chicken breasts with a mallet until 1/4 inch thick- ish.

  2. In a shallow bowl, mix together crushed pretzels and spices.

  3. In a separate bowl, beat eggs.

  4. Coat chicken in the eggs, then dredge with the pretzel mixture.

  5. In a large skillet, heat olive oil over medium heat.

  6. Cook chicken for 4-5 minutes per side. Make sure the heat is hot enough to cook chicken thoroughly, but low enough that the pretzel crust does not burn.

  7. *Drizzle honey mustard on top!
