PRETZEL CRUSTED CHICKEN

This recipe is not your average chicken dinner. Crispy, yet juicy, and full of pretzel goodness!
INGREDIENTS:
1 lb boneless chicken breast
2 cups of pretzels, crushed
2 large eggs
1 tbsp olive oil
1 tbsp paprika, onion and garlic powder, salt and pepper
* optional: honey mustard dipping sauce
DIRECTIONS:
Flatten chicken breasts with a mallet until 1/4 inch thick- ish.
In a shallow bowl, mix together crushed pretzels and spices.
In a separate bowl, beat eggs.
Coat chicken in the eggs, then dredge with the pretzel mixture.
In a large skillet, heat olive oil over medium heat.
Cook chicken for 4-5 minutes per side. Make sure the heat is hot enough to cook chicken thoroughly, but low enough that the pretzel crust does not burn.
*Drizzle honey mustard on top!
