ONE POT CREAMY SAUSAGE AND RICE

This one pot, cheesy, creamy sausage and rice dish will be your next go to dinner recipe. We all know one pot meals are the best. I mean, who would ever complain about less dishes to wash?!


INGREDIENTS:

  • 2 tbsp olive oil, divided

  • 2 tbsp butter

  • 12 oz Kielbasa sausage, cut into 1 inch pieces

  • 1/2 cup yellow onion, diced

  • 2 tbsp minced garlic

  • 2 1/2 cups chicken broth

  • 1 1/4 cup rice (Any kind you'd like: white, brown, or long grain! I prefer brown)

  • 10.75 oz (1 can) Cream of Chicken soup

  • 1/2 cup sour cream

  • 1/2 cup milk

  • 1 cup shredded cheddar cheese

* optional: a pinch of red pepper flakes, chives for garnish

This recipe can also be made with any veggie you'd like! I like to use peas or broccoli, but it's great with red and green peppers as well.


DIRECTIONS:

  1. Sear sausage over medium heat in 1 tbsp of olive oil. Remove and set aside.

  2. Add butter, onions, and remaining olive oil, cook until softened. Add garlic and cook for 1 minute.

  3. Add chicken broth and rice, stir.

  4. Bring to a boil, reduce to a simmer, cover tightly and cook for 10-12 minutes.

*If you're choosing to add veggies, do so after step 4. Cover and cook for 5-6 more minutes.*

5. Add milk, sour cream, cream of chicken soup, and cheese.

6. Stir to combine, season with salt and pepper if needed.

7. Add sausage until heated through, then serve!
