ONE POT COCONUT CHICKEN CURRY

If you love curry like me, you're gonna want to make this quick and easy coconut chicken curry dish, ASAP. Just one pot and dinner is served!
INGREDIENTS:
1 lb boneless chicken breast, cut into 1 inch cubes
1 can full fat coconut milk
1 medium yellow onion, diced
1/4 cup beef broth
2 tbsp minced garlic
3 tsbp coconut oil
3 tbsp red curry paste
2 tsp yellow curry powder
2 tsp coriander
1 tbsp brown sugar
1 tsp basil
1 tbsp lime juice
Salt and pepper
DIRECTIONS:
In a large, deep skillet heat 2 tbsp of coconut oil over medium high heat.
Add diced onion and cook until golden.
Add minced garlic, curry paste, curry powder, basil and coriander. Stir until combined.
Add beef broth, lower heat and simmer until most of the liquid is absorbed.
Add chicken and remaining coconut oil, cover and cook on medium high heat for 6-8 minutes, stirring occasionally.
Add coconut milk, lime juice, brown sugar, and salt and pepper to taste, stir.
Cook for another 5-6 minutes or until sauce starts to thicken.
Serve with rice noodles or jasmine rice!
