ONE POT CHICKEN, SAUSAGE, & VEGGIES

This simple one pot meal is a new favorite of mine. My boyfriend made this meal for me and I licked the plate clean! Too good not to share.


INGREDIENTS:

  • 1 cup frozen, diced chicken breast

  • 1 cup pre-cooked kielbasa sausage, sliced

  • 1 cup frozen mixed veggies (we used carrots, corn, peas, and green beans)

  • 1 cup frozen butternut squash, cubed

  • 2 tbsp olive oil, divided

  • 1 tbsp lemon pepper

  • 1 tbsp garlic and herb seasoning

  • 1/2 tbsp citrus seasoning

  • 1 tsp salt

  • *fresh basil for garnish

DIRECTIONS:

  1. In a large skillet, heat 1 tbsp olive oil over medium high heat.

  2. Add chicken breast and kielbasa, and cook for about 5 minutes- stirring occasionally.

  3. Add frozen veggies, squash, seasonings, and remaining olive oil. Stir and cover.

  4. Cook covered for about 6-7 minutes, stirring occasionally, until veggies are heated through.

  5. Garnish with fresh basil!
