LEMON ORZO SUMMER SALAD WITH SHRIMP

This lemon orzo salad is giving me major summer vibes. Loaded with tender shrimp, savory veggies, and a generous squeeze of lemon juice, you'll want to make this refreshing pasta dish again and again!
INGREDIENTS:
1 cup cooked orzo
1/2 lb shrimp, peeled and deveined
1-2 lemons, juiced
1 small bunch asparagus, cut into 1” pieces
3/4 cup frozen sweet peas
1/2 white onion, chopped
1/4 cup crumbled feta cheese
2 tbsp minced garlic
2 tbsp olive oil, divided
1 tbsp butter
1 tbsp fresh dill
1 tsp red pepper flakes
Salt and pepper to taste
DIRECTIONS:
In a large skillet over medium heat, sauté shrimp in butter, a squeeze of lemon juice, and season with salt and pepper. (I also seasoned with lemon pepper and paprika.) Set aside once cooked.
In that same skillet, heat 1 tbsp of olive oil over medium heat, add onion and cook until golden.
Add asparagus and peas. Once asparagus is almost tender (about 7-8 minutes), add minced garlic and stir. Cook for an additional 1-2 minutes.
In a large bowl, mix together cooked orzo, shrimp, veggie mix, feta, dill, red pepper flakes, olive oil, and a few generous squeezes of lemon juice. Stir, season with salt and pepper, and serve!
I prefer mine slightly chilled with extra lemon.
