INSTANT POT SHRIMP SCAMPI

If you don't have an instant pot, I highly recommend investing in one! This flavorful, lemon-garlicky pasta cooks in only 3 minutes!
INGREDIENTS:
2 lbs shrimp, peeled and deveined
12 oz angel hair pasta, broken in half
3 tbsp butter
3 1/2 cups chicken broth
2 tbsp minced garlic
1 tbsp olive oil
Juice of 1 lemon
1/4 cup asiago cheese
1/4 cup parmesan cheese
1/2 cup milk
1/4 tsp red pepper flakes
1 tsp onion and garlic powder
1 tbsp parsley
Salt and pepper to taste
DIRECTIONS:
Turn instant pot to sauté mode. Add oil, butter, and garlic. Cook until fragrant (about 2 minutes).
Coat shrimp with salt, pepper, red pepper flakes, onion and garlic powder.
Add 1/2 cup of chicken broth, lemon juice, and shrimp to the pot. Sauté until fully coated (4-5 minutes or so). Remove shrimp from pot, set aside.
Add pasta to the pot and cover with remaining chicken broth, separating it as much as you can. DO NOT USE THE RACK. (I made this mistake- it leaves the pasta very undercooked).
Pressure cook on high for 3 minutes, and quick release pressure when finished.
Turn pot back to sauté mode, add milk, cheeses, and shrimp. You can also add more lemon juice if desired. (I highly recommend)!
Stir until cheese is melted and most of the liquid is absorbed.
Top with parsley and a sprinkle of parmesan!
