DORITO CASSEROLE

This cheesy, Dorito casserole is at the top of my list for simple, weeknight dinners. Less than 30 minutes to make, and you probably have most of these ingredients at home right now! Another quick and delicious way to enjoy taco Tuesday!

INGREDIENTS:

  • 1 lb ground beef

  • 1 package taco seasoning

  • 1 (14.5 oz) bag nacho cheese Doritos

  • 1 cup whole kernel corn

  • 1 (10.5 oz) can condensed cream of chicken soup

  • 1/2 cup sour cream

  • 1 cup shredded cheddar cheese, divided

  • 1 small can Rotel with green chilies

  • 4 green onions, chopped

  • 1/4 cup taco sauce (or Western dressing)

*optional- 1 cup black beans


DIRECTIONS:

  1. Preheat oven to 375.

  2. Cook and chop ground beef, then add taco seasoning.

  3. In a greased casserole dish, put down a layer of finely crushed Doritos. (I used about 2 cups, and just crunched them in a gallon zip lock bag with my hands.)

  4. In a large bowl, mix together taco meat, 1/2 cup shredded cheddar cheese, Rotel, cream of chicken, sour cream, corn, and taco sauce.

  5. Layer the mixture carefully over the crushed Doritos.

  6. Bake for 15 minutes, uncovered.

  7. Remove from oven, sprinkle remaining cheese, green onions, and 1-2 cups lightly crushed Doritos. (You just gotta have some bigger, crunchy pieces!)

  8. Bake for another 5 minutes, scoop and serve!
