CRISPY CHICKEN & POTATOES WITH GARLIC DIJON CREAM SAUCE

Don't overcomplicate your weeknight meals! This crispy chicken dish comes together in 30 minutes. Topped with a creamy, garlic dijon sauce, you'll swear it came straight from the restaurant!
INGREDIENTS:
1 lb boneless chicken breast
1 bag steam-able baby red potatoes
1/4 cup Dijon mustard
1 cup heavy cream
1 cup chicken broth
1/4 cup flour
1/4 cup parmesan cheese
1 tbsp olive oil
2 tbsp minced garlic
2 tbsp butter, divided
2 tbsp salt, pepper, italian seasoning, garlic and onion powder, divided
DIRECTIONS:
In a large skillet, heat 1 tbsp butter and olive oil over medium heat.
Dredge chicken with flour and 1 tbsp of spices. I use a gallon zip lock bag and shake!
Cook chicken over medium heat for 5-6 minutes per side, until crispy.
In a sperate saucepan, heat remaining butter over medium heat.
Add minced garlic and cook until fragrant, about 1 minute.
Add chicken broth, remaining spices, and Dijon mustard. Once heated through, whisk in heavy cream and parmesan cheese.
Cook potatoes according to package directions. Once cool enough to handle, slice in half and add to your saucepan.
Spoon potatoes and sauce over the crispy chicken, and serve!
