CREAMY TORTELLINI WITH BACON, PEAS, & ASPARAGUS

Let's be honest, pasta is great in all forms, and deliciously cheesy tortellini is no exception. Add in some parmesan cheese, crispy bacon and garlicky veggies- it's the perfect comfort food dish.

Ready in just 30 minutes!


INGREDIENTS:

  • 9 oz three cheese tortellini

  • 4 slices of bacon, cooked and chopped

  • 1 cup chopped asparagus

  • 3/4 cup frozen sweet peas

  • 1/2 cup shaved parmesan

  • 1 cup heavy cream

  • 2 oz cream cheese, softened

  • 2 shallots, diced

  • 2 tbsp minced garlic

  • 2 tbsp olive oil

  • 1 tbsp lemon pepper

  • 1 tbsp onion powder

  • 1 tbsp paprika

  • Salt to taste

DIRECTIONS:

  1. Cook tortellini according to package directions, drain and return to the pot.

  2. In a large skillet, heat olive oil over medium heat.

  3. Add shallots and cook until softened (about 5 minutes), then add minced garlic. Cook for about 1 minute, until fragrant.

  4. Toss in asparagus, peas, lemon pepper, onion powder, and paprika.

  5. Cook veggies for about 6-7 minutes, or until asparagus is tender. Remove from the pan and add to tortellini.

  6. In your skillet, heat heavy cream over medium high heat.

  7. Add parmesan and cream cheese. Stir continuously until cheese is melted, scraping the bits from the bottom of the pan.

  8. Pour sauce over the tortellini and veggies, add chopped bacon and stir. Add salt if needed.


*I love using the same skillet to cook the bacon, veggies, and sauce for a smoky bacon flavor!
