CREAMY SUNDRIED TOMATO & BASIL CHICKEN

Would you believe me if I told you this recipe was a happy accident? You won't after you make it! Crispy chicken breast with creamy parmesan cheese, sundried tomatoes and fresh basil. It's the meal your taste buds didn't know they needed!


INGREDIENTS:

  • 1 lb boneless chicken breast

  • 1/4 cup finely shredded parmesan cheese

  • 3 tbsp butter, divided

  • 1/2 cup white wine or chicken stock

  • 3/4 cup heavy whipping cream

  • 1/4 cup sundried tomatoes

  • 2 tbsp minced garlic

  • 1 small yellow onion, chopped

  • 1 tbsp paprika

  • 1 tsp lemon pepper

  • 1 tsp red pepper flakes

  • Salt and pepper to taste

  • Fresh basil, finely chopped

DIRECTIONS:

  1. In a large skillet, melt 2 tbsp of butter over medium high heat.

  2. Flatten chicken breast to even thickness, season with salt and pepper.

  3. Sear chicken on both sides for about 4-5 minutes, set aside.

  4. Turn heat to medium and melt remaining butter.

  5. Add onion, garlic, tomatoes, spices, and a sprinkle of fresh basil. Stir occasionally until onions are cooked through.

  6. Add white wine or chicken stock to deglaze the pan. Let simmer for few minutes.

  7. Turn heat to medium low and add heavy cream. Stir until a creamy sauce forms.

  8. Add parmesan cheese, and more salt and pepper if needed. Stir until cheese is melted.

  9. Pour sauce over chicken and garnish with more fresh basil!
