COPYCAT CHILI'S SKILLET COOKIE

My boyfriend's favorite dessert is Chili's famous skillet cookie, or "pizookie". I'm not a big dessert person, but I always have to order one whenever we go there. One big, warm, chocolate chip cookie topped with vanilla ice cream and chocolate syrup- I barely managed to snap a pic of just the cookie before it was devoured!
INGREDIENTS:
1 1/4 cups all-purpose flour
1/2 cup packed brown sugar
1 cup semi-sweet chocolate chips
1/4 cup granulated sugar
1/2 cup butter, softened
1 egg
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1/4 teaspoon salt
DIRECTIONS:
Preheat oven to 325 degrees.
In a large bowl, cream together butter and sugar until it's light and fluffy. If you don't have a mixer- slowly pat down the butter with a small spatula.
Add egg and vanilla extract, beat well.
Add in dry ingredients one at a time, mixing slowly in between.
Pour half of the mixture into a greased cast iron skillet. If you use the whole batch- it will come out like a cake.
Bake for 20-35 minutes, until it starts to brown and the middle is set. The cooking time is based on the size of your skillet. The smaller the skillet, the longer the bake time. I used a 10.25 inch Lodge skillet, and baked for 25 minutes.
Serve with vanilla ice cream, extra chocolate chips, and a drizzle of chocolate syrup!
