COCONUT RUM GRILLED SHRIMP

It's grilling season foodies! You're definitely going to want to put this recipe at the top of your summer favorites list. I swear, these grilled shrimp taste just like a summer evening on the beach.
As always, this recipe is only a few ingredients and super simple to make!
INGREDIENTS:
1 lb shrimp, peeled and deveined
1/4 cup spiced rum*
13.5 oz can coconut milk
1/2 cup brown sugar, packed
2 tbsp lime juice
1 tbsp garlic powder
1 tbsp paprika
Salt and pepper to taste
DIRECTIONS:
In a medium sized bowl, whisk together coconut milk, rum, brown sugar, and lime juice. Whisk until sugar is dissolved.
Coat shrimp with half of the coconut mixture and refrigerate for at least 30 minutes.
Heat the remaining mixture in a small saucepan over medium low heat, stirring frequently until it starts to form a glaze.
Remove shrimp from the marinade, and place on wooden skewers that have been soaked in water, about an inch apart.
Season shrimp with garlic powder, paprika, salt and pepper.
Grill over medium high heat for about 2 minutes per side.
Brush glaze over top of shrimp and enjoy!
* Don't be afraid to use the cheap rum! Cheaper alcohol is great to cook with. I used Captain Morgan's traditional spiced rum for this recipe.
