CHIPOTLE RANCH SHRIMP PASTA

Ever have one of those days where you don’t know what to make for dinner, and you’re burnt out on searching for a new recipe? When this happens for me, I end up raiding the pantry and creating something totally new! Sometimes- it doesn’t turn out how you want, but this recipe I threw together is definitely a new favorite of mine! I used all Aldi ingredients for this recipe, so it’s very budget friendly!


INGREDIENTS:

  • 2 cups cooked pasta (I used penne)

  • 1 package frozen shrimp, peeled and deveined

  • 1/4 cup light sour cream

  • 2 tbsp chipotle ranch dressing (I used Simply Nature)

  • Juice from 1 lemon

  • 2 tbsp oil

  • 1 tbsp garlic powder

  • 1 tbsp onion powder

  • 1 tbsp lemon pepper

  • 1 tbsp paprika

  • 1 teaspoon red pepper flakes

  • 1 teaspoon parsley

  • Salt and pepper to taste

DIRECTIONS:

  1. In a large bowl, season and coat shrimp in garlic powder, onion powder, lemon pepper, paprika, salt and pepper.

  2. In a large skillet, heat oil over medium heat. Add shrimp and cook for 4-5 minutes. Set aside.

  3. In a separate small bowl, combine sour cream, lemon juice, and the chipotle dressing.

  4. Add the mix to your skillet, then heat and whisk until it’s a saucy consistency.

  5. Add the shrimp and pasta into your skillet, and stir to combine.

  6. Garnish with red pepper flakes, parsley, and an extra squeeze of lemon juice!
