CHIPOTLE RANCH SHRIMP PASTA

Ever have one of those days where you don’t know what to make for dinner, and you’re burnt out on searching for a new recipe? When this happens for me, I end up raiding the pantry and creating something totally new! Sometimes- it doesn’t turn out how you want, but this recipe I threw together is definitely a new favorite of mine! I used all Aldi ingredients for this recipe, so it’s very budget friendly!
INGREDIENTS:
2 cups cooked pasta (I used penne)
1 package frozen shrimp, peeled and deveined
1/4 cup light sour cream
2 tbsp chipotle ranch dressing (I used Simply Nature)
Juice from 1 lemon
2 tbsp oil
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp lemon pepper
1 tbsp paprika
1 teaspoon red pepper flakes
1 teaspoon parsley
Salt and pepper to taste
DIRECTIONS:
In a large bowl, season and coat shrimp in garlic powder, onion powder, lemon pepper, paprika, salt and pepper.
In a large skillet, heat oil over medium heat. Add shrimp and cook for 4-5 minutes. Set aside.
In a separate small bowl, combine sour cream, lemon juice, and the chipotle dressing.
Add the mix to your skillet, then heat and whisk until it’s a saucy consistency.
Add the shrimp and pasta into your skillet, and stir to combine.
Garnish with red pepper flakes, parsley, and an extra squeeze of lemon juice!
