BEER MAC & CHEESE WITH STEAK BITES

HOLY YUM. There's nothing better than beer, mac and cheese, and savory steak. So why not throw them all together? This recipe is the ultimate in comfort food. Garlic butter steak bites and gooey cheese, with a kick from your favorite light beer. Read on for all the yummy deets. You know you want to!
This recipe makes a lot. Perfect for sharing or leftovers!
INGREDIENTS:
1 lb (box) elbow macaroni, cooked
12 oz light beer (I used Miller Lite)
8 oz colby jack cheese, shredded
8 oz sharp cheddar cheese, shredded
1/4 cup sour cream
1 block cream cheese, cubed
1-2 cups steak bites, cooked
2 tbsp paprika
2 tbsp onion powder
Salt and pepper to taste
*optional parsley for garnish
DIRECTIONS:
Place a large pot over high heat.
Add beer and cream cheese, bring to a simmer.
With a wire whisk, break up cream cheese into smaller pieces.
Add cheddar and colby jack cheese. I used blocks of cheese and shredded them myself. This melts the cheese more easily and cohesively.
Turn heat to low and whisk until smooth.
Add sour cream, spices, salt and pepper. Whisk some more.
Pour cooked noodles and steak bites into the cheese sauce, stir.
Simmer for 3-5 minutes until the sauce begins to thicken, then serve!
I purchased pre cut steak kabobs for this recipe, and seasoned them with salt, pepper, garlic and onion powder. I seared the steak in a large skillet over high heat with 2 tbsp minced garlic and 3 tbsp of butter, then cut them into bite sized pieces before tossing into the cheese mixture!
